About the farm
Luis Aníbal Calderón is a legend – 2nd generation coffee farmer from Acevedo, Huila, with over 40 years in the field. In 2015, he made a bold decision: to convert his entire farm to exotic coffee varieties. It paid off. Today, Finca Villa Betulia is one of the most compelling specialty coffee operations in the region.
Luis cultivates an extraordinary range of varieties, including Gesha, Pacamara, Sidra, Java, Pink Bourbon, Wush Wush and many more — each lot processed with precision and intention. He has developed mastery across multiple processing methods: extended fermentation, honeys and naturals.
For this washed Pacamara, Luis and his team hand-picked only the ripest cherries, sorting and floating them on-site to eliminate any low-density or defective beans. Then, the cherries underwent a 30-hour underwater fermentation — a controlled anaerobic process that gradually breaks down sugars and organic acids, building complexity while preserving the variety’s inherent delicacy. After fermentation, the mucilage was washed away and the coffee moved to parabolic dryers on the roof of Luis’s house, where it dried slowly and evenly over 8 to 15 days, reaching a moisture content of 9.5–11%.
