About the farm

Brayan Smith represents the third generation of coffee producers from Huila, Colombia. Growing up on a coffee farm, he absorbed the passion and dedication with which his family approached every harvest. Today, he focuses on cultivating new varieties and refining farming practices. He is also the leader of Asosatus, an association of producers dedicated to growing exceptional coffee varieties from the Huila region.

Brayan’s farm is located in Pitalito at an altitude of 1,500–1,800 m.a.s.l. Among the varieties he cultivates is Papayo, a unique coffee that combines outstanding cup quality with excellent agronomic characteristics, including resilience in challenging growing conditions and high productivity. It is celebrated for its sweetness, floral character, and remarkable cup profile. The variety takes its name from the elongated shape of its beans, which resemble the fruit of a papaya.

During harvest, Brayan and his team carefully hand-pick only the ripest cherries. The cherries then undergo a controlled 30-hour underwater fermentation before being washed and slowly dried on raised beds. This meticulous process enhances Papayo’s layered sweetness, vibrant acidity, and delicate floral notes.
