About the farm
El Indio was produced by a community of approximately 175 coffee-farming families from Planadas, in Colombia’s Tolima region. The coffee is naturally processed here with technical support from Cofinet. The high-mountain location, fresh weather, and volcanic soil are ideal for growing exceptional coffee varieties such as Caturra. Tolima is one of Colombia’s most productive coffee-growing regions and has long been represented in the Cup of Excellence, organized by the Colombian Coffee Federation.
The caffeine is removed using sugar cane molasses. This method preserves the coffee’s unique character while slightly boosting its sweetness. First, the green beans are placed in a steam chamber, where their silver skin is removed. The beans are then submerged in spring water and, once saturated, sent to an extractor, where they stay in direct contact with sugar cane molasses for 8 hours, dissolving the caffeine. After decaffeination, the coffee is dried in a chamber until it reaches the same moisture level it had before the process.
