Itumpi AMCOS operates in the Songwe region, Mbozi district, in southwestern Tanzania. The cooperative was established in the 1970s and today counts 160 active farmers. Clay-loam soil, annual rainfall of 1,300–1,800 mm, and an average temperature of 20.5°C create favorable conditions for growing Bourbon-derived varieties — mainly N39 (90%) and KT423 (10%). The cherries are first pulped to remove the skin. The resulting parchment is sorted into fractions (P1, P2, P3, P lights, and pods) in washing channels, then soaked in tanks for 8–10 hours. Drying takes 7–10 days, depending on weather conditions in the region.
