About the farm
In San Ignacio province, in the heart of Peru’s Cajamarca region, farmers work at 1200–1500 MASL, harvesting only fully ripe cherries. Thanks to a partnership with the local Asociación Agropecuaria de Productores del Norte, the farms hold organic certification.
Grown in loam soil at an average temperature of 20–23°C, the main varieties here are Catuai, Caturra, Bourbon, and Mundo Novo. Hand-picking and sorting the cherries eliminates any defects. After the cherries are de-pulped, the coffee ferments for 20 to 30 hours, then dries slowly in the shade – drawing out the best of what’s inside.
